These sweet potatoes blew me away! No more boring sweet potatoes! Wait wait. Stop for a second. Can you feel it? In the air? FALL IS COMING! I don’t know why I love fall so much. I love spring and summer too–and I tolerate winter– but there’s something about the September air that gets me excited. Maybe it’s college football season (my husband and I went to rival schools, so it’s always fun), or maybe it’s sweaters and boots, but my guess is that it’s actually the fall food: pumpkin everything, roasted vegetables, soups and stews… yup, that’s definitely it.

One of my favorites to roast is sweet potatoes. If you get it just right, they are crunchy on the outside, and perfectly soft on the inside. This recipe is one of the best I have made, and the south-of-the-border flair makes it uniquely yummy.

Chili Lime Roasted Sweet Potatoes

Chili Lime Roasted Sweet Potatoes

Ingredients

  • 4 Sweet potatoes, cut into one inch cubes
  • 1/4 cup extra virgin olive oil
  • 2 TBSP honey
  • 2 TBSP chili powder
  • Salt and Pepper

Instructions

  • Whisk together olive oil, honey, and chili powder.
  • Toss sweet potatoes in seasoning mixture.
  • Sprinkle with salt and pepper.
  • Bake at 375 degrees for 25-30 minutes, turning once.
