Can you feel it? Fall is in the air: The leaves crunch under our feet, we start bundling up in sweaters and pants (or leggings, I don’t judge), and nothing sounds better in this weather than a warm bowl of soup, or a nice warm meal straight from the slow cooker. 

Today we want to share some of our favorite soups and slow cooker meals for the colder weather. 

Ashley’s pick: 5 Ingredient Black Bean Soup

I have so little time these days for cooking, it’s hard to gather thousands of ingredients to make a single meal. That’s why I love this 5 ingredient black bean soup recipe. It’s quick, easy, and delicious. This is amazing topped with sharp cheddar, avocado, and plain Greek yogurt, which subs for sour cream making the soup creamy and amazing.

Ashley’s pick: Chicken & Lime Soup

Budget Bytes is quickly becoming my favorite go-to website for balanced weeknight meals. The recipes are fairly simple, don’t involve strange ingredients, and typically strike a good balance of protein and veggies. This chicken & lime soup recipe is amazing paired with a side salad or even quick cheese quesadillas.

Ashley’s pick: Lemon Pepper Crock Pot Chicken

Because we can’t have soup all the time, here’s another recipe favorite. As a general rule, I despise my crock pot. Everything I cook turns out mushy and flavorless… except this magical chicken dish. This chicken doesn’t fall apart into shreds or get over dry like most chicken I’ve cooked in the crock pot. The secret is the prep work: browning the chicken beforehand. It may seem like extra work when other crock pot recipes are just dump and go, but it’s totally worth it. I love serving this with steamed broccoli and my amazing Greek yogurt twice baked potatoes (recipe coming soon!)

Allison’s Pick: Crock Pot Quinoa Tacos

Sometimes I really want to try making vegetarian meals and sometimes I’m really scared I will be starving afterwards because of the lack of protein.  These quinoa tacos reassured me that vegetarian meals can be delicious and filling.  I topped my tacos with tomato, avocado, and lettuce.  For another spin on Meatless Monday or Taco Tuesday give these crockpot quinoa tacos a try!
