I’m pretty sure I’m going to cry next time I check the mail. The electricity bill is coming, and I am not excited to see what that looks like.
Let me tell you, being 8 months pregnant in the summer heat is tough, but without air conditioning I would be dying.
Fortunately my only concern now is just how much that air conditioning is costing me. Ok, maybe I do have one more concern: avoiding turning on the oven or stove at all costs.
As much as I love to cook, sweating it out in the kitchen is just not happening right now. So I’ve resorted to more recipes like this avocado and cucumber soup. This creamy and delicious chilled soup is a perfect addition to lunch or dinner, and that can be easily made in a blender in just a few minutes. Plus, it is so refreshing and cooling that I can’t help but feel a little less overheated after enjoying a bowl.
