greek yogurt pancakes I’m just gonna lay it all out there… I love breakfast food. There’s not one breakfast food that I don’t adore. Ok, I take that back. I’m not a huge fan of bacon.

I know, I know, according to most people bacon is like the best thing ever, but I’ve really never liked it. Don’t hate me.

But one thing that I do LOVE is pancakes. I’ve been making protein pancakes for quite some time now, and I love that they are fluffy, delicious, and so easy to make. Then I started getting creative, adding chopped nuts, berries, flavors… But I have to say this is one of the best combos I’ve come up with. Blueberries + Meyer lemon = amazing + awesome.

Speaking of Meyer lemons… did you know that they are actually half lemon half mandarin orange? I actually discovered Meyer lemons a couple years before I learned this fact. No wonder they are so much sweeter than normal lemons!

Even though these pancakes look super fancy, they’re incredibly easy to make.

Meyer Lemon and Blueberry Pancakes (made with oats & greek yogurt!)

Meyer Lemon and Blueberry Pancakes (made with oats & greek yogurt!)

Ingredients

  • 1 cup plain Greek yogurt
  • 1 cup rolled oats
  • juice of 2 meyer lemons
  • 2 tbsp honey
  • 1 egg
  • ½ cup fresh blueberries
  • 1 tsp coconut oil
  • ~ ¼ cup almond milk (additional if needed)

Instructions

  • Blend all ingredients except blueberries and additional almond milk in a blender.
  • Gently mix in blueberries
  • Add additional almond milk if batter is too thick
  • Melt & spread coconut oil on a skillet on medium heat
  • Scoop approximately 1/4th cup of batter onto pan and cook about 5-8 until it starts bubbling through, then flip and cook on the other side.
  • Cook all pancakes, then enjoy topped with homemade blueberry syrup or greek yogurt
