crock pot steel cut oatsBreakfast and I have had a strained relationship as of late. Let’s just be very clear, adore breakfast food, I need breakfast to feel my best, and I know I make better choices when I eat a good breakfast. But these days, my morning consists of breakfast for baby, changing diapers, playing, and not really having much time for me until nap time, which also happens to be writing and work time for me.

So I’ve struggled a little with breakfast.

But in the past four months I’ve adapted, and discovered a lot of really amazing make-ahead recipes. One I have been experimenting with is crock pot steel cut oats. This version is one of my favorites, and is a perfect wintery morning breakfast porridge. My husband loves adding a scoop of protein powder to his, and I prefer adding some yogurt or a side of eggs to create a complete meal.

Crock Pot Pomegranate Apple Steel Cut Oats


  • 1 cup steel cut oats
  • 4 cups liquid (water, coconut milk, or almond milk -- I used coconut milk)
  • 3 medium apples, chopped
  • 3/4 cup pomegranate arils
  • 2 tsp cinnamon
  • Honey/maple syrup to taste


  • Mix all ingredients except honey/maple syrup in a medium to large crock pot.
  • Cook on low for 8 hours.
  • Serve and add sweetener to taste

Serves 4
