Raspberry chipotle chickenI’m not an online quiz type person. But one that a friend posted on Facebook the other day really intrigued me. It was called “how awesome is your husband?”

Knowing I have an awesome husband, I thought: ok, I’ll bite, and took the quiz. All the answers were lining up, and I was certain I was going to get the result of 100% awesome husband.

Until it got to the cooking questions. Sigh. He lost points there. As awesome as my husband is, he really can’t cook. In nearly five years of marriage, he’s learned three kitchen skills: scrambled eggs, grilled cheese, and green smoothies.

Actually, come to think of it, there’s one more cooking talent that he has. Grilling. As long as I prepare everything, marinade the meat, form the burgers, and have the veggies ready to cook, he can man the grill like a champ. Which is awesome, because that’s something I never figured out myself. I know it can’t be that hard, but I don’t even know how to turn on the grill.

Luckily, he loves helping me cook dinner when it comes to grilling, otherwise I would be making recipes like this one on my little dorm-room sized George Foreman grill that I’ve had since college — nearly a decade.

This is one of my favorite grilled chicken recipes, and only needs a few ingredients. It’s also the star ingredient in my red raspberry chicken salad.

And in case you’re wondering…. he ended up at 86% awesome. Maybe I should have reconsidered the cooking answers, now that I think about how much grilling he does over the summer.

Raspberry Chipotle Grilled Chicken

Raspberry Chipotle Grilled Chicken


  • 2 lbs boneless skinless chicken breast
  • 1/4 cup bbq sauce
  • 1/4 cup italian dressing
  • 2 Tbsp raspberry jam
  • 1 chipotle chili pepper (canned, in adobo sauce)
  • 2 Tbsp adobo sauce from chiles


  • Pound down chicken breast into 1/2 inch think, and cut into individual servings
  • Mix the remainder of ingredients
  • Marinade chicken in mixture for 3-5 hours, or overnight
  • Grill until cooked through

Makes 6-8 servings
