Variety is the spice of life, right? I’ve always thought so, and I’m the kind of person that will load up on a little bit of everything when I go to the salad bar. Same holds true when I make salads at home. I throw a little of everything in.
Yet somehow, those salads never taste as great as the simple ones with just a few ingredients that complement each other perfectly.
I’m no chef, but when putting together this salad using my raspberry chipotle grilled chicken, I decided to go for simplicity. And I have to say, it was perfect! The red onion, feta, and the raspberry vinaigrette are a perfect combo with the tangy grilled chicken, and fresh raspberries and cucumbers make a cooling and refreshing addition.
I think I am going to have to remember this and be more creative and selective about my salad ingredients in the future, instead of just the dump everything in and mix approach.
Speaking of dump everything and mix, I tried something a little different when it comes to dressing. Instead of drizzling it over the top, I mixed it in with the lettuce first, then added the toppings. It make the whole salad much more flavorful, and there were no dry spots that the dressing missed. I’m going to have to try this technique more often as well.
